Hi! I hope all of you had a wonderful weekend! Ours was great – the weather was perfect, and we spent the whole weekend outside having fun and playing. There will be more about that later this week! In the meantime, here is a quick recipe that is easy to put together on the fly. I actually made it in the morning to take to the beach to eat for lunch later.
Soba Noodle Salad with Ginger Peanut Dressing
I did make a few changes – instead of the cucumber, carrot, and bell pepper I used a bag of Eat Smart Vegetable Stir-Fry very lightly cooked. I also didn’t have any brown rice vinegar, so I used rice vinegar instead. I think it would have been better if I had used apple cider vinegar instead.
This turned out delicious, and it was so easy to make!

I love soba noodles. So much more flavor and texture than a lot of pasta. Great for peanut (and cayanne) spices.
