Christmas Breakfast–Overnight Blueberry French Toast

Good morning!  I hope you all had a wonderful Christmas.  I know I did!  Little Miss had such a wonderful time opening all of her presents, and she’s been busy playing with them ever since!  On Christmas morning we had a delicious breakfast – Overnight Blueberry French Toast!  I’ve been wanting to make an overnight french toast for a long time, and my cousin posted this one and I thought it looked delicious.

The great thing about this one (other than it tasting delicious), is that it’s a good one that your children can help with.  Little Miss really enjoyed layering all of the ingredients!

Overnight Blueberry French Toast

  • 3/4 loaf of French bread, cubed into 1 inch pieces
  • 3/4 brick of lite cream cheese, cut into small cubes (we used a little less)
  • 3/4 cup frozen blueberries
  • 4 eggs
  • 3/4 cups milk
  • 1 tsp cinnamon
  • 2 1/2 T maple syrup
  1. Spray an 8×8 casserole dish with cooking spray and add 1/2 of the french bread cubes. 
  2. Sprinkle the cream cheese and blueberries evenly over the bread, then top with the remaining bread cubes. 
  3. Mix milk, cinnamon, eggs and maple syrup together in a large bowl.  After combined, pour over the bread mixture.  Gently press the bread down to make sure it all gets into the egg mixture.  Cover and place in refrigerator for at least 8 hours.
  4. Preheat oven to 350 and remove bread from refrigerator.  Cover the casserole with aluminum foil and bake for 30 minutes.  Uncover and bake 25-30 more minutes until center is set and the top is golden brown. 

This is really rich and yummy, perfect for Christmas morning!  We served ours with plain syrup, but if you’d like a yummy blueberry syrup check out this recipe.  It would also be great for the morning after New Year’s!

    The Little Miss photo is priceless… what a great little helper she is! This recipe sounds delicious. Do you think it could be modified successfully with a whole wheat/grain bread instead of the French?

    • I think a whole wheat bread would go great in this recipe! My husband prefers French, which is why I went that route – plus the place that has the great whole grain bread here was not on my list of places to go that day!
