Dilly Stew with Rosemary Dumplings

Now that the weather has gotten a lot colder, it’s time for comfort food.  To me, there is nothing better than a huge bowl of hot soup on a cold day.  This amazing soup is guaranteed to warm you right up! 

Dilly Stew with Rosemary Dumplings

First, you make a roux.  This was actually my first time making a roux, and it was a lot easier than I thought it would be!

Once it’s nice and clumpy, you add in your onions and cook that for a bit.

Then you’ll add some broth, carrots and potatoes.  In the original recipe she added beans too – I left them out, I’m sure it’s good with them too! 

While that’s cooking, make your dumpling dough.

Once the dough is made and the veggies cooked, you get to throw in the dough, out on the lid, and let it work it’s magic.

Next thing you know you’re eating a delicious soup!

This was wonderful!  I’ll definitely make it again, and when I do the only change I’ll make is to add more carrots, just to have a little more color in there.
