Cooking Basics : Pickled Onions

When I first heard about pickled onions, I wasn’t sure if I wanted to make them.  I’m not a huge pickle person, so I wasn’t sure how I’d like them.  However, I’d heard lots of great things, so I thought it wouldn’t hurt to give them a try.  I’m so glad I did!  They’re sweet and crunchy and zingy and pretty – try them in soups, or load them up on your (veggie) burger!  You can’t go wrong with these!

Pickled red onions

This is a basic recipe, so feel free to get creative.  Add some red pepper flakes for spice, ginger, garlic, or any other flavor you like.  I added a dash of allspice to mine. 

Pickled Red Onions

  • 2 red onions
  • 1/2 C apple cider vinegar
  • 1/4 C sugar
  • 1/2 tsp salt
  • 1 tsp black pepper
  • Any spices you want

Cut the onions into thin slices.  Try not to slice your finger open at this point like I did!

Bring a large pot of water to a boil.  Blanch the onions for two minutes and then rinse with cool water to stop the cooking process.  Feeling lazy?  Put the onions in a glass container, cover with water, and cook for two minutes. 

Heat vinegar, sugar, salt, pepper, and any other spices in a small pan over medium heat.  Stir until the sugar is dissolved. 

Place onion slices in a glass container, and pour the vinegar mixture over them.  Turn as needed to have all of the onions in the liquid for 10-15 minutes. 

Enjoy!  These should keep in your fridge for a few weeks, but trust me, you won’t have a problem gobbling these up!

    I started making pickled onions after a mexican restaurant on the beach had them. Great on Tacos.(Used to be where Laguna is now) I never cooked them though, I just put them in the jar and waited. I will try your recipe
