On the weekends, we often like to have special treats for breakfast. My husband loves pancakes (and he makes them), so when I saw this recipe for Cinnamon Roll Pancakes I knew we needed to make them!
It’s really easy – you simply make a cinnamon filling that you drizzle over your regular batter once you pour out your pancake. We added 1/2 tsp vanilla extract to our pancake batter just to jazz it up a little. We use the recipe from The Joy of Cooking. If you need a recipe, try this one.
Once you flip the pancake, the cinnamon-sugar mixture caramelizes into crunchy cinnamon goodness!
Finish it off with a drizzle of Cream Cheese Glaze, and you’re in pancake and cinnamon roll heaven!
This makes a lot. We made enough pancakes for the three of us and still had enough to make a batch the next weekend!
Cinnamon Filling

1/2 C butter, melted

3/4 C brown sugar, packed

1 T ground cinnamon
Simply mix the filling ingredients together. We mixed ours in a bowl and used a spoon to drizzle. If you have a pastry bag, you could use that.
Cream Cheese Glaze

4 T butter
-
2 ounces cream cheese
-
3/4 C powdered sugar
In a microwave-safe bowl, heat butter and cream cheese until melted. Whisk together until smooth, then whisk in the powdered sugar. As you can see from the photos, ours didn’t get smooth, but it was still yummy!
