Can you believe Easter is almost here? Mrs. Cubbison’s sent me their Stuffin’ Seasoned Corn Bread and Croutons and challenged me to make my own Easter-Themed Culinary Creation. I’m familiar with Mrs. Cubbison’s croutons, so I decided to work with the stuffing mix instead. I’m typically a dressing girl myself, but I thought it would be fun to try something different!

I made a delicious mushroom and spinach stuffing with a little red pepper thrown in there as well for some color. I thought it tasted great! I think I’m going to get some zucchini tomorrow and put the stuffing in there and bake it – I think that will make it even better! If you’re looking for a quick stuffing, definitely check them out.
Mushroom and Spinach Stuffing
- 1-6 oz. bag Mrs. Cubbison’s Stuffin’ Seasoned Corn Bread
- 1 T butter
- 3/4 C mushrooms
- 1/4 red pepper
- 1 C fresh baby spinach, cut into slivers
- 1 C Veggie broth
Sauté mushrooms in the butter. Combine all of the vegetables and the stuffing mix in a large bowl.
Stir broth in slowly. Spoon into a 8×8 pan that has been sprayed with cooking spray. Bake covered 30 minutes at 350 F. Remove cover and bake 5-10 minutes longer for a crisper crust.

I have heard of Mrs. Cubbison’s products and would love to try the Stuffin’ Seasoned Corn Bread. This looks healthy and delicious and I enjoy mushrooms. I would add more veggies and have this for lunch.
