As you may have figured out by now, we were on vacation last week. By the time we got home, I wasn’t really in the mood to fix anything elaborate for next week’s lunches! Fortunately, I remembered a super-simple recipe that I’ve been wanting to try for a really long time.
For a long time, I’ve always wanted to try “mock” tuna salad made with garbanzo beans. I’m not sure why I never did, but now I’ve tried it and I’m sure it will become a staple for me! Doe it taste like tuna salad? Not at all. Is it delicious? Yes! Plus it’s super-easy to put together. Little Miss had a great time mashing the beans and mixing the ingredients together! Give it a try and let me know how you like them!
“Mock” Tuna Salad
Ingredients

2 C garbanzo beans (chickpeas), drained and mashed ( used some I had cooked, but canned works too)

2 T plain yogurt (you can use a vegan brand if you’d like)

2 tsp spicy brown mustard
-
1 T sweet pickle relish
-
1 T rice seasoning
-
salt and pepper to taste
Directions
In a medium bowl, combine all ingredients. Mix well. Refrigerate overnight, then use on sandwiches or on top of salads!













I LOVE tuna salad, and I LOVE chick peas too. I would have NEVER thought to do this! I am going to try it and report back! Funny thing…..my mom has always made an english pea salad in the same manner we tend to make tuna salad and we (my kids included) have always enjoyed that dish! Never thought of putting it on bread!

Very easy to prepare! I prefer tuna when I don’t like eating meat, love to try your tuna salad, healthy and affordable.
Now I can do this– I always have extra cans of the beans in the house and if I blend it in the bullet and put in the cheese, pickles, onions,celery the kids and I will love it Im sure– thanks–great idea.
