These meatless balls are so yummy! Try a few of them on top of a salad, or on a bed of couscous topped with roasted vegetables and a bit of balsamic. Either way you’ll thank yourself! The feta cheese is really yummy in this – you’re not going to want to leave it out!  Plus, they come together quickly and easily – cook your own beans if you have time!

Mediterranean meatless balls

 

2- 14.5 ounce cans cannellini beans, rinsed and drained

1 cup whole wheat bread crumbs

½ medium red onion, finely chopped

½ cup roughly chopped spinach

1 Tablespoon dried oregano

1 T Mediterranean blend seasoning (I use World Market’s blend)

2 cloves garlic, minced or pressed

1 Tablespoon Dijon mustard

¾ teaspoon kosher salt

½ teaspoon ground black pepper

*Optional: 1 cup (about 4 oz) crumbled feta cheese

DIRECTIONS

1. In a food processor, puree 1 can of cannellini beans.

2. Add the remaining can of cannellini beans, breadcrumbs, onion, parsley, oregano, garlic, Dijon, and salt & pepper and process a little more – there should still be some bean pieces left. Add in feta – mix until just combined.

3. Form into 30 golf ball size meatless balls.  I flattened mine, but you can leave round if you’d like.  Place on pan and cook at 350 until browned on each side – about 7 minutes a side.

4.  These also make great burgers – just make them into burger size patties instead.  They may require a little more cooking time. 

 

They go great with some couscous and roasted veggies!
