Chipotle Peach Potatoes

These potatoes are absolutely addictive! Feel free to use any dried fruit you’d like – the sweetness of the fruit combined with the spiciness of the chipotle is a great combo!  Great dish to bring to potlucks, and really easy to throw together.

  • 2 cloves garlic, minced
  • 1-3 chipotles in adobo sauce, minced
  • ¼ cup apple cider vinegar
  • ¼ cup chopped dried peaches or other dried fruit
  • 2 T molasses
  • 1½ teaspoons kosher salt
  • I bag potato Inspirations, halved (about 20 ounces).  Or about 20 ounces potatoes cut into chunks.


1. In a large, plastic bowl combine garlic, chipotles, vinegar, apricots, molasses, and salt. Add in potato wedges and gently stir to evenly coat.

2. Heat oven to 400 degrees. Place potatoes in a 9×13 glass baking dish, pouring marinade over them, and cook for about 30-35 minutes. Be sure to take out and stir a couple of times while they are cooking!
