At our house, we love having something special for Christmas breakfast. A lot of the time we do something that can be made the night before, but this year we wanted to change things up a little bit. This was a great choice – it tasted great, and it didn’t take too long to make. We used English Muffins, which we’ve found work great for French Toast. Feel free to use Challah or another hearty, thick-sliced bread if you prefer.
This would be wonderful for New Year’s morning as well!
Apple Pie French Toast
For French Toast:
1.5 C milk
½ teaspoon milk
1 teaspoon vanilla extract
1 teaspoon sugar
- For Apple Pie Topping:
2 medium apples, peeled and sliced
¾ cup brown sugar
4 tablespoons butter
¼ teaspoon vanilla
½ teaspoon cinnamon
Preheat the oven to 350 degrees F.
Whisk eggs through salt in a shallow bowl.
Heat 1/2 tablespoon butter in a nonstick skillet over medium heat. Working in batches, dip 6 English Muffins in the egg mixture and cook in the skillet until golden; 2 to 3 minutes per side, adding more butter as needed.
Transfer to a baking sheet and bake until puffed, 8 to 10 minutes.
Mix brown sugar and butter in a medium saucepan. Cook over medium high heat until brown sugar has dissolved and butter has melted.
Add apple slices, vanilla and cinnamon and reduce heat to simmer, cook 6-8 minutes longer. Remove from heat and allow to cool slightly and thicken while toast is baking.
